The best part is we end the evening with a special treat. Each week we take turns planning and making that treat. This week was my turn and I decided to make some avocado mousse.
This idea came to me from a readers comment left in a previous post, here, on ways not to waste avocados. I happened to have some frozen avocados and bananas that needed to be used so I decided to experiment.
This recipe was intended to be a mousse, but the consistency was just not light and airy enough to be called a “mousse” so it turned into a pudding 🙂 .
All of the kids came back for seconds so I think it was a success! I hope you ENJOY it too!
Chocolate Avocado Pudding
- 2 avocados
- 2 bananas
- 3 scoops USANA Chocolate Whey Nutrimeal
- 1/4 cup unsweetened milk (almond or coconut)
- 1/4 – 1/2 cup honey
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- pinch of salt

What do you think? Will you try it? I think if you get past the weirdness of avocados, bananas and chocolate being combined together 😀 you might just like it. The consistency was nice and smooth, definitely like a pudding.
The flavor is not nearly as sweet as a traditional pudding but we were okay with that. I suppose you could add more honey but you want to be careful not to add too much for two reasons.
1. honey, although natural, is still a sugar and it still spikes your blood sugar like sugar does.
2. I think too much honey will leave this pudding with a funny taste. Honey can have a strong flavor and I don’t think you want to overpower the pudding.
