My daughter and I especially like this Spicy Edamame. It makes a great snack on its own, but we also really enjoy it on top of this Avocado Cucumber Soup or on top of salads.

Spicy Edamame Recipe

Ingredients

  • 1 pkg frozen edamame*
  • 1-2 cloves garlic (about 1 Tbsp minced)
  • 1 Tbsp fresh ginger, grated
  • 1-2 Tbsp sesame oil (toasted or regular, both are tasty)
  • 1/2-1 tsp Sriracha
  • salt to taste

Directions

This is super easy. Heat the frozen edamame according to package directions or look below for instructions if using fresh edamame. While the edamame is warming mix the rest of your ingredients into a medium-size bowl. Add the cooked edamame and toss until all of the beans are coated. You are all set, enjoy as a snack, on a tasty salad or a something like this Avocado Cucumber Soup

*I would recommend buying the already shelled frozen edamame so you don’t have to mess with removing the beans from the pod. However, if you already have the frozen edamame in their shells just warm the edamame according to the package directions. Let them cool enough to handle. Then they should be fairly easy to pop out of their shell. It is just a little time-consuming.

*If you have fresh edamame look below on how to cook & shell your beans. You should do the shelling process prior to seasoning the edamame so you are seasoning what you are going to eat. You wouldn’t season the outside of a banana or orange and then peel it so I don’t understand why so many people do this with the edamame. The outer shell is not meant to be eaten. I often even peel the thinner skin off around each bean too. If you hold the blanched bean in between your fingers and give a little squeeze it usually pops right out of its skin.

How to cook/peel edamame

 

Boil your fresh edamame in salted water for 5-6 minutes, drain and then put them in an ice bath to stop the cooking process. Basically, you just fill a large bowl with ice and water (leaving room in the bowl for you to add your beans too).

Once the beans have cooled it is fairly easy to shell. You want to separate the pod at its seam with your thumbs and it should pop right open. Then remove the beans from the pod. I just run my thumb up the center (again like you would with fresh peas)

You are now ready to make your Spicy Edamame.
