I really enjoy trying new foods and flavors, unfortunately, some of my family members don’t feel the same as I do. So I try to add new flavors to favorite foods so there is still some familiarity. That is how I came up with this Thai Chicken Curry Burger.
When my 8-year-old daughter took her fist bite her first words were “WOW, that is good mom!” Then my 7-year-old son said “This is 100% good, no it’s 1000% good! I’d eat this for breakfast, lunch & dinner.” Who doesn’t like high praises like that! When I hit a home run like this is when I have to share with you. Even if I hadn’t planned on it 😀 . Thai Chicken Curry Burger
- 1 lb. ground chicken
- 3/4 cup cooked quinoa
- 4 green onions, thinly sliced
- 1/4 cup cilantro
- 1.5 Tbsp. green curry paste
- 1 small zucchini, shredded
- salt & pepper to taste
- Toppings: avocado, lettuce, bean sprouts, red onion, sriracha, etc.
Grate the zucchini and place it in a clean towel or cheesecloth and squeeze out the extra moisture. Combine all ingredients in a medium bowl and form into patties, we got 6 good size patties out of ours. Grill the burger until cooked through and build your burger. The quinoa and zucchini make this a super moist burger.
The quinoa and zucchini make this a super moist burger. However, they are more on the optional side if you don’t like zucchini I’d leave it out and I think it would still be a great burger & same with the quinoa. Since cilantro is the best herb ever I would add more next time, my sister-in-law would nix it completely. I suppose if you have to leave it out I would survive, just don’t tell me about it 😉 .
