If you like carrot cake you will enjoy this carrot cake oatmeal. I really liked the nice warm spices and texture of this oatmeal. Perfect for a cold morning.

Carrot Cake Oatmeal
- 2 carrots, shredded (about 2 cups)
- 4 cups coconut or almond milk
- 1 cup steel-cut oats
- 2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp salt
- 2 Tbsp pure maple syrup
- Optional Toppings
- toasted coconut
- Sweet & Spicy Nuts (I just used the walnuts)
- chia seeds
- ground flax
- additional maple syrup
I like to toast my oats because I think it enhances their flavor. This is completely optional though. To toast your oats you can do one of two things. Either put them into a dry skillet or melt 1 Tbsp coconut oil over medium heat and stir frequently for about 2 minutes, until they get nice and fragrant. The toasting process is the same either way, with or without oil.
Add all ingredients, minus the toppings, to a saucepan over medium heat. Bring to a boil and then reduce heat. Simmer for 20 – 25 minutes or until the oats are tender and creamy. I stir occasionally to make sure they aren’t getting burnt or stuck to the bottom.
*If you like your raisins rehydrated and plumped up you could add them to the milk and cook them with the carrots and oats instead of using them as a topping.
Remove from heat and serve with desired toppings.
If you have leftovers divide up the remainder of the oatmeal and put into individual mason jars. When you reheat the oats add 1-3 Tbsp of milk to loosen the oats back up. Top with your toppings and enjoy.
