Day 26 of 30 Day Recipe Challenge

I love a good salad.  This is one of my favorites.  Maybe because I love farm fresh eggs and that this recipe isn’t overly complicated for a salad recipe.

If you want to be a bit more adventurous, you could try the Curry Dressing recipe on this.  However, I love it with a dressing recipe I’ll be posting tomorrow.



This recipe serves 4


  • 8 cups spinach leaves
  • 1 small red onion, sliced into rings
  • 8 crimini mushrooms, sliced
  • 10 oz package grape tomatoes
  • 1 cup sunflower seeds
  • 4 hardboiled eggs, quartered


I like to assemble this salad individually, rather than in a big bowl because then the eggs get to be the star of the show.  I layer the salad with spinach, then top with the red onion, mushrooms slices, and grape tomatoes.  Then I top with hardboiled egg and sprinkle on the sunflower seeds.

Last, I spoon on the dressing.  I recommend the Mustard Seed Oil & Vinegar Dressing (which will be posted tomorrow!).

Plus, my dirty little secret…I don’t like raw tomatoes, so they are included for your benefit.  ;-)
