A friend of mine wrote a post on Facebook about a yummy tasting smoothie that she made and she used a soy eggnog. I must admit, the kids and I enjoy a good glass of eggnog every year about this time so it got me thinking about trying a healthy eggnog recipe.

This was the first batch I made and after a few snapshots, they insisted I make another batch and this time quadruple the recipe so they could each have their own glass! 😀

Healthy Eggnog Recipe
- 1 cup vanilla flavored unsweetened almond milk or coconut milk
- 3 Tbsp Vanilla Nutrimeal (or other high-quality protein powder)
- 1 Tbs 100% pure maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1 cup ice (or more for a milkshake quality)
Place all ingredients in a blender. Blend until smooth. Serve immediately and enjoy! It is that simple!
Trust me, you will not be disappointed with this protein shake! Make it for your next holiday gathering and you will definitely impress your guests.
*Update: I have made this recipe several times since the original post and have made it with several different brands of protein powder. Let me tell you the quality of the protein matters immensely!
Also, depending on the protein powder you go with you might have to adjust the sweetness by adding a little more maple syrup or even leaving it out completely. You might need to add a little more vanilla too because I have found some of them don’t have much vanilla flavor at all.
